The Today Show’s Al Roker visited Stephen Colbert Thursday to talk about his new cookbook, but the late show host noticed something off about one of the recipes.
Roker, who recently returned to the Today Show after the tragic death of his ex-wife, explained that the book was put together by himself and his daughter, who is a professional chef. Each recipe is one that holds a special place in Roker’s heart, coming from his mother and grandmother.
The 70-year-old weatherman titled the book “Al Roker’s Recipes to Live By.” He said he cooks four to five nights a week, and his go-to is his mother’s recipe for oxtail stew and pineapple upside-down cake.
Roker said: “My mom never wrote down recipes, my grandmother didn’t. So [his daughter] had to literally reverse engineer all the foods I would talk to her about.”
While Colbert agreed the dishes sounded tasty, he pointed out what he saw as a mistake in the book. Opening to a page with shrimp tikka masala, he brought Roker’s attention to the photo, where the shrimps in the sauce still had tails.

“Look at those shrimp, look at that. They still have the tails on the shrimp,” Colbert said. “Why do you keep the tails on shrimp in a sauce?”
Roker played along, realizing every shrimp recipe in the book still had tails included. Even his shrimp and grits recipe had tails.
Colbert continued: “Am I supposed to roll up my sleeves, put on a poncho, and detail the shrimp myself?”
“Would you leave a hoof on a burger? Why would you do that?” Colbert question. Roker then quipped back: “It’s a little handle.”

In the comments, people went back and forth on the right way to eat shrimp.
One fan wrote: “I’m with Stephen on this! I hate getting my hands dirty eating. I’m paying for them to fully prepare my ingredients, it’s not an IKEA shrimp curry!”
Another added: “Stephen, you always leave the tails on… except in a stir-fry.”
